Pavi's Thai Veggie Rice Paper Roll
Take any vegetables of your choice and finely chop them.
I used 5 broccoli florets, about 100 grams mushroom, 2 carrots, 1 capsicum, about 100 grams of purple cabbage.
In some oil, sauté 1 onion, grate in some ginger and garlic, after it’s cooked a little, add all the chopped vegetables with some salt. Once vegetables soften a little add some oyster sauce, soy sauce and chilli oil. (Make sure you add less salt in the beginning to compensate for the soy sauce). Let veggies cook in their own water.
I used real Thai rice paper sheets. Take the sheet, immerse it in a plate of water for like 5 secs on each side. Take it out, stuff the veggies and make a parcel out of it. Once you’ve made everything, air fry or pan fry
So the rice paper as such is stiff but when you immerse it in water and take it out it’ll soften up nicely. So just folding it from all four sides will do. Make sure you don’t immerse for too long, the paper will continue getting soft after taking out too.

Watch from 17 secs for the parcel technique. I did just one layer and worked well for me.
And the peanut sauce was amaze, can be used for noodles too.
Mix together peanut butter, soy sauce, chilli oil, brown sugar and a little sesame oil. The peanut butter to soy ratio is 2:1. Everything else can be upto taste. Add a little hot water to dilute the pb
