Pavi's Biriyani

500gm rice
10 tbsp Oil (4 tbsp can be replaced with ghee) (10tbsp - approx: 130gms)
Bayleaf + Cloves + Star Anise + Cinnamon + Cardamom (4 + 5 + 1 + Small stick (based on cinnamon type) + 2)
4 big onion Indian size (300 gms) - thinly sliced
Add Salt
Ginger garlic paste- 2 tbsp - Saute a LOT
Tomatoes - thin slices - 3 medium sized | 200 gms - Saute a lot
Green chilli - 6 - Slitted
Add mint (one hand) and cilantro (half of mint quantity) - Mint powder can be substituted with mint - cilantro - use only the leaves
Add chicken or veggies (500 gm) (may be veggies can be lesser)
Turmeric powder - ΒΌ tsp
Chilli powder - 1Β½ tsp
Salt
Now oil has to separate
Add water for rice (judgement based on rice- typically 1 rice: 1.5 water)
Bring water to boil with masala
Scrape the bottom of the pan to avoid burning at the bottom
Add rice to the watered masala
Let it cook open until the rice shows on top
Now taste and add whatever is missing. (Lemon if there's no tang)
close the lid and pray to your favourite gods.
cook on low flame for 10 mins
Turn off the flame and let it be closed for 15 mins (don't open the lid)
Open the lid, add coriander leaves (fine chopped), ΒΌ tsp garam masala, 1 tsp ghee, and mix everything together
