Cornbread

Ingredients (in grams)

120 g cornmeal
125 g all-purpose flour
50 g sugar (optional)
12 g baking powder
3 g salt
240 g milk (or buttermilk)
2 large eggs (~100 g without shells)
60 g melted butter (or oil)

Instructions

Preheat oven to 400°C. Grease an 20 cm pan or skillet.
Mix dry: cornmeal, flour, sugar, baking powder, salt.
Mix wet: milk, eggs, melted butter.
Combine: Stir wet into dry until just mixed.
Bake: 35–40 minutes until golden and set.
Let cool slightly, then slice and serve.
