Chermoula Fish Bake

Ingredients

1.5 lb salmon, cod, or sea bass
1 bunch cilantro
1 bunch parsley
3 garlic cloves
Juice of 1 lemon
3 tbsp olive oil
1 tsp cumin
1 tsp paprika
1/2 tsp coriander
1/2 tsp chili flakes (optional)
Salt + black pepper
2 potatoes, thinly sliced
1 zucchini, sliced
1 red onion, sliced

Instructions

Blend cilantro, parsley, garlic, lemon juice, olive oil, cumin, paprika, coriander, salt, and pepper into a thick green marinade.
(we can also use beet leaves for making the marinade)
Toss fish with half the chermoula.
Spread potatoes, zucchini, and onion on a baking tray and coat with the remaining marinade.
Place fish on top.
Bake at 400°F (200°C) for about 20–25 minutes.
